MY overnight oats


Good morning to all! Hope everyone is having a nice Monday morning. It is raining like crazy here and dreary as all get out, very blah morning. Later today I have a bbq for one of my classes, it’s our “final”, pretty nice huh?!

On a quick side note with the bbq, I have a quick question. What would you do if a teacher of yours, who you aren’t close to, is having a bbq and you pretty much eat vegetarian? Although I do eat a little meat, it’s only when I REALLY want to, and I don’t want to eat meat just because I feel obligated too. I know in a lot of situations I would talk to the person and/or bring a dish, but this is a really weird scenario because we aren’t really close or anything. I think I’m just gonna stick to eating the side dishes and have a sammy beforehand. Also the bbq isn’t until 1 so maybe I just got hungry, right?! Your input is much appreciated!

Roasted mushroom with goat cheese and pesto

OK, now on for the main event. If you are a frequent reader of my blog you might remember my OhSheGlows overnight oats FAIL.  The thing is, since I have been prepping iced coffee for my breakfasts I have decided more and more that I LOVE not having to make a meal when I get up in the morning, I just want it to be ready. So, I was determined to make an overnight oats recipe work. Well I’m happy to say I found great success as Borat would say ;-)

Ingredients:

1 full nanner (1 min in the microwave and mashed)

1/3 cup oats

1/2 cup vanilla almond milk

slightly less than 1 tbsp chia seeds

1 tbsp TJ’s creamy peanut butter

cinnamon to taste

drizzled a tiny amount of honey

Instructions:

1) Microwave the nanner

2) Put all ingredients in a bowl and mix

3) Cover and put in the fridge overnight

4) Wake up in the morning and enjoy!

These were soooo good, the banana added a great amount of sweetness and they had just enough chia seeds to add volume, but not over crunch (actually they were not “seedy” tasting at all, which was really nice)

I am a HUGE baseball fan, in fact in the future I want an Airedale Terrier named Henry Albert (Henry because it’s a cute name and Albert for my man Albert Pujols of course!!) Needless to say, my Astros fan bf isn’t the biggest fan of that idea. HA!

  3. BBQs are so hard when you don’t eat meat. But hopefully they’ll have good sides.

    I’m not a big baseball fan. We only have a minor league team where I live so it’s hard to get too excited.

  4. My boyfriend is an astros fan, too! I am a red sox fan, but that’s because I’m from the area and their 2004 World Series victory meant a lot to me. Like my dad, I like all baseball. It makes me sad when people bash arod, because that is my nickname! Just kidding! He deserves it.

    Great pizza, looks delicious!

    BBQs can be hard…sometimes people make great veggie side dishes, but often times there is not much for vegetarians. Perhaps you can bring your own veggie burger to cook?

  7. I think sticking with the sides would be fine– at things like BBQs, people don’t really notice what others are or aren’t eating. Or you could always bring a veggie burger on your own!

  8. Hope the bbq went well, and you had some options other than meat. Your pizza looks delish!! I have actually never made overnight oats, but this recipe sounds soo good, glad it wasn’t a FAIL ;)

  9. I had pizza last night too… but I was lazy and picked up a couple slice from Whole Foods! ;) I was so close to picking up a slice of pesto pizza, now I’m wishing I did!! That looks amazing!! :)

    As for the BBQ, I wouldn’t touch any meat if I didn’t want to. I’d load up on things like baked beans, salad, fruit, corn on the cob, etc. No one will even notice!! :)

  10. Way to go with the overnight oats success! I’d try to stick to the sides at the BBQ! And maybe have a snack before you go! :)

    We are Cubs fans in this house…and after tonight’s game, I reluctantly say that as it wasn’t good!

  12. I could TOTES hang with that pizza. Yum-bo.

    For mustard maple tempeh, I just mix 2 tsp maple syrup with a heaping tbsp of spicy mustard, a dash of cayenne, and marinade my tempeh in it before baking. I cannot recommend it enough!
